Last winter I was committed to the low-carb Atkins diet and developed healthy low-carb recipes that my son and I would enjoy. This became a family favorite.
Prep time: 5 minutes
1 Cup Whipping Cream
3 teaspoons coco powder
1/4 teaspoon Stevia sweetener blend (Used Wholesome! Organic Stevia brand). Not sweet enough? Try adding just a pinch more. The sweetener aftertaste is not noticeable with this ratio.
1 teaspoon vanilla
Optional 1 teaspoon Myers Dark Rum
Put all ingredients in a mixing bowl (or blender) and mix until it makes gentle peaks (not firm) but not as thick as whipping cream.
Scoop mixture into individual small cups or ramekins. Ready to serve.
STORING: Put any of the cups into the refrigerator that will be eaten that day. The remainder, cover with tin foil and put in the freezer for quick yummy low-carb goodness.
TIP: Get the mini ramekins for individual servings. Use leftovers to put on your coffee for a great mocha treat.
