I love slow-cookers! It is the fastest way to make an impressive meal without laboring over the stove. Since I got my first crock-pot I have been developing and fine-tuning recipes to serve some healthy hardy variety to the table.
1 pack roasting beef sized to suit
2 Modelo Blonds beer (1 is also ok)
2 tablespoons tomato paste
1 bay leaf
2 tablespoons olive oil
4 cloves garlic
1 tablespoon Worcestershire sauce (poured over beef)
1 pinch Cayenne (more if you like it spicy)
1/2 teaspoon smoked salt
1/8 teaspoon pepper
Feeling adventurous? Try these additional spices to your rub:
Directions: Mix the spices together and rub into the meet with your hands. Place 1/2 of the onions on the bottom of the crock-pot. Place the beef on the onions. Pour the Worcestershire over the beef then place the garlic and remaining onions on top of the beef. Pour the beer around the beef. Put on the lid and turn on the cooker. I prefer to cook on low for a full day or for a full 20 hours if your crock-pot has a safe option to do so.
TIP: Have an old crock-pot? Protect yourself from house fires by placing your crockpot on the stove or another fireproof surface when you leave the house. I upgraded mine to the All-clad with ceramic insert which has a stainless steel bottom addressing this concern.
